I told the insurance agent that we have a fire extinguisher in the kitchen, but we really don't! However, I have full intentions to purchase one, but I don't know what kind to buy! Is there different types, and, if I remember correctly, only certain types should be used on certain fires.

You want to buy one that will take care of class A, B, or C fires (wood/paper,flammable liquids, electrical). Most hand-held home extinguishers are good for this, and are typically Halon. Class D fires are for flammable metals, and you shouldn't encounter them in a home/kitchen. Unless you have a chemistry lab!
